Firstly, this recipe is great during the end of the garden season when you have plenty of extra herbs and tomatoes on hand to add to this recipe.  The fresh basil addition to this recipe is by far my favorite ingredient.  There are so many great basil varieties out there but the globe or party pesto basil are my favorites hands down. 3 Food Choices for Arthritis

  • The extra virgin olive oil in this recipe is loaded with heart-healthy fats. Extra virgin olive oil has properties similar to non-steroidal, anti-inflammatory drugs.
  • Calcium and vitamin D are found in Parmesan Cheese  in this recipe that helps strengthen bones.
  • Consuming foods from the allium family such as garlic which is in this recipe as well. This helps with fewer signs of early osteoarthritis (OA). Research shows the compound diallyl disulfide in garlic may limit cartilage-damaging enzymes in human cells.

Ingredients

  • 1 small cauliflower cut into small florets

  • 2 tablespoons of olive oil

  • 2 tablespoons of butter

  • 2 cloves of garlic (minced)

  • 8 eggs

  • 1/2 cup fresh basil (chopped finely)

  • 1 cup all-purpose flour ( substitute with a gluten free choice)

  • 1 teaspoon ground turmeric

  • 3/4 teaspoon ground turmeric 

  • 3/4 teaspoon ground cumin

  • pinch chili flakes

  • 1 1/2 teaspoons kosher salt

  • ground pepper to taste

  • 1/3 cup of parmesan cheese freshly grated

  • 2 cups of grape tomatoes (sliced)

Directions

  • Preheat oven to 400*F 

  • Steam or roast cauliflower until tender, about 12 minutes.  You can also use the air fryer like my roasted cauliflower recipe.

  • Set aside in a small skillet, heat oil and butter over medium heat to sauté garlic. Add the garlic to the cauliflower bowl.

  • Add eggs and basil, whisking well.  Add dry ingredients including parmesan cheese.  Whisky until smooth. Add tomatoes to the bowl.  Now all ingredients should be well whisked but not over worked.

  • Spray a 9 1/2 inch diameter springform pan with cooking spray.  Pour mixture into this pan making sure it is spread evenly.  

  • Bake at 400*f for about 40-45 minutes on the middle rack.  When the top is golden brown use a knife to see if the center is cooked.  Insert the knife to the middle and if it removes clean it is done.  If done, let the cake rest for about 15 minutes before removing from the spring form pan. 

  • Slice into wedges and serve with your favorite gourmet lettuce.

    1. Hi – I make this recipe using whole wheat flour and add diced green chiles. So delicious I make it once a month or so. (I usually add a bit more turmeric than called for!)
