Just in time for the green pepper and cucumber harvest in my home garden I happen to click over to Instagram and found this YUM recipe. At first glance it looks like a loaded with empty calorie dip but once you start reading the ingredients loaded with fresh peppers, onions and cucumbers the #healthyliving hashtag will love this treat. This recipe does have to sit over night in the refrigerator to marinate but it is worth the wait once you serve it up in your favorite bowl with nacho chips!
