This time of year I’m looking for something easy and tasty to make up for meals. In this post I share a family favorite: Easy Thai Chicken and Vegetable Soup Recipe.

I first came across these new flavor infused broths this past winter. They are a great way to create homemade meals with many of the fresh veggies I grow or get from farmers market quick and easy.  The recipe I’ve changed to fit my families approval was taken from the Swanson Thai Chicken Vegetable Soup Broth.  I like to make the chicken optional because the veggies taste amazing on their own in the broth/ coconut milk soup.

Note: If I can’t find this Thai chicken broth in the years to come I am fresh out to luck. (sad)  It tastes so amazing in soups.

This is one of my favorite soups to make because of the vegetables.  How can you not love how bright and beautiful these vegetables are?

You can get creative and use mushrooms from the Asian market.  I have even used the Morel mushrooms we find in our woods here in NW Ohio.  Be careful to check and make sure the mushrooms you find outdoors are edible and haven’t been sprayed with anything.  Mushrooms Guide can be found here!

It is so much fun to take photos while you cook.  I believe I used my Nikon Digital for these images in 2015.  Today I do most of my kitchen photography and videos from my iPhone.
