I’ve got a huge harvest of red russian kale in the dome this month so it’s time to get creative and add it into some recipes that my family will love.  Today I’m going to share my Dad’s favorite meatloaf recipes with a super healthy kale spin.

Savory Meatloaf with Kale Surprise

Ingredients

  • 1 1/2 pounds ground beef
  • 2 egg
  • 2 cloves of minced garlic
  • 1 onion, chopped
  • 1 cup milk
  • 1 cup dried bread crumbs
  • 1 medium tomato diced
  • 1/2 cup of chopped kale
  • salt and pepper to taste
  • 2 tablespoons brown sugar
  • 2 tablespoons prepared mustard
  • 1/3 cup tomato sauce

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine the beef, egg, onion, milk,chopped kale and bread.
  3. Season with salt and pepper to taste and place in a lightly greased loaf pan.
  4. In a separate small bowl, combine the brown sugar, mustard and tomato sauce. Mix well and pour over the meatloaf.
  5. Bake at 350 degrees F for 1 hour.

Shhh….. secret ingredient

The boys ate this meal up quicker then Friday’s fresh pizza from favorite local restaurant!   My son over heard me while I was broadcasting on Harvest DomeNation presentation that their was kale in the meatloaf …. he just smiled and said ‘sneaky… must have been the hot pepper sauce I put on it!’   HA
