Couscous and Cherry Tomato Salad

Everyday I enjoy a fun walk to my geodesic bio dome and talk to my cherry tomatoes that are already up over a foot high in Mid-May.  I can’t wait to take my first bite this year of that vegetable.  The sweet 100’s and a few of my other varieties produce so many tomatoes on one plant all season long it is hard to keep up with picking them much less eating them!  In today’s share I’ve got a yummy cherry tomato salad recipe from Chef Anthony that is a simple and savory recipe for whole-wheat couscous. Enjoy it for lunch, as a side dish, or as a hearty snack any time of day.  It is part of this months salad shares on my site so stay tune for more great ideas later this week as we head into Memorial Day weekend.

Couscous and Cherry Tomato Salad with Pritikin’s Tuscan Sunshine Italian salad dressing


  • 1/2 red onion chopped
  • 1 cup cherry tomatoes halved
  • 1 teaspoon garlic powder
  • 1/2 teaspoon oregano dried
  • 1/4 teaspoon black pepper
  • 1 1/2 cups water
  • 1 cup couscous (whole wheat)


  1. Lightly mist a medium nonstick saucepan with canola oil spray and pre-heat over medium-high heat.
  2. Add onions to pan and sauté until softened, about 2 minutes.
  3. Add tomatoes, garlic, oregano, black pepper, and water to pan, and bring to a boil.
  4. Lower heat and simmer until tomatoes begin to soften, about 3 to 4 minutes.
  5. Meanwhile, place couscous in medium mixing bowl.
  6. Remove tomato mixture from heat and immediately pour over couscous. Cover and let stand 5 to 8 minutes, until couscous is tender and liquid is absorbed. Stir with fork to fluff before serving.
