Chocolate Cake Recipe From The Made From Scratch Life

It’s summer growing season which makes it a super easy time to eliminate processed foods from our diets with all the fresh veggies and fruit on hand. Did you know there are simple ways you can live healthy with basics you can have at easy access year round? In today’s podcast I got to speak with the lovely modern homesteading Author Melissa K. Norris who shares some great tips on how to keep it simple living at home with basic recipes and even cleaning solutions that you don’t have to leave your home to create.  She was kind enough to share some great recipes and ideas that were recently published in her second book : The Made-from-Scratch Life: Simple Ways to Create a Natural.  You are going to love the cleaning tips and creative recipes that are highlighted in this presentation.

Chocolate Cake Cupcake The Made-from-Scratch Life: Simple Ways to Create a Natural Home Paperback – February 1, 2016

Chocolate Cake Recipe


  • 2 cups flour (I used soft white wheat but all purpose or cake flour is fine)
  • 1 cup sugar (I use organic evaporated cane juice)
  • ½ cup cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¾ cup mayonnaise
  • ½ cup cold water
  • ½ cup brewed coffee
  • 1 teaspoon vanilla
  • Frosting
  • 5 Tablespoons butter (I think cream cheese would work well, too)
  • 1 and ½ cups brown sugar
  • 3 Tablespoons boiling water
  • 1 teaspoon vanilla


  1. Preheat oven to 350 degrees.
  2. Stir all dry ingredients together.
  3. Combine wet ingredients with dry until smooth.
  4. Pour into greased and floured pans.
  5. Bake at 350 degrees for 30 to 40 minutes for a cake or 16 minutes for cupcakes. Cool completely before frosting.
    For frosting.
  1. Beat butter and slowly add in sugar until creamed together.
  2. Pour in boiling water and beat until creamy. Spread over cupcakes.
