In this post, I share a video and images featuring how easy it is to make a delicious homemade soup.  Using a few fresh and basic ingredients you can whip this up in no time.  I turned the video recording on to make my favorite Chicken and Rice Soup in the Electric Power Pressure Cooker.   If you don’t have an electric pressure cooker such as an instant pot – you need one!

Chicken and Rice Soup Ingredient List

Most of these ingredients I always have on hand, especially when I leave out the avocado.  I am really hoping someday I will have a better avocado connection for my recipes. In the years to come who knows, I just may have my 3 avocado trees producing so I can enjoy the fruit anytime. (wishful thinking) Don’t forget the detailed list of ingredients are below in a printable version.

Ingredients:

  • Rotisserie Chicken (shredded into bite-size pieces)
  • small sweet onion (diced)
  • Saffron Yellow Rice (1/2 of packet mix by Vigo)
  • carrots
  • chicken broth
  • green chiles
  • cumin spice
  • diced tomatoes
  • jalapeno (optional)
  • fresh cilantro
  • corn chips (optional)

Chicken and Rice Soup in Pressure Cooker Recipe

Ingredients

  • 1 cup of shredded rotisserie chicken (bite size)

  • 1/2 cup of sweet onion diced

  • 2 cloves of garlic

  • 1/2 cup of carrots shredded

  • 1 small can of green chilies (drained)

  • 6 cups of chicken broth

  • salt and pepper to taste

  • 1 cup of yellow rice package with seasons

  • cilantro, tomatoes, jalapeno for garnish

  • corn chips

Directions

  • Prepare all veggies and meat so you can just add to pressure cooker as you go

  • Heat 1 tablespoon of olive oil in the pressure cooker up on 'sauté' setting to prepare onions and garlic

  • Once sauté add carrots and 1 cup of broth - heat up so that it is boiling

  • Add the chicken, seasons, chilies and remaining broth mix to the pressure cooker.

  • Cook on soup setting ( electric pressure cooker  12 minutes)

  • Let the electric power pressure release on it's own.  This usually takes about 5 minutes.  Keep warm until ready to serve with corn chips.
