When I saw parsley in the ingredients of this recipe I had to cook this up for my family.  I have tons of parsley growing in the dome this winter and I just picked up some leek seeds to try growing.  Another fun ingredient to this soup is prunes.  My husband wasn’t too sure about having prunes in his soup until he came in from the barn for lunch and the scents of leeks, chicken and wild rice cooking hit him and he couldn’t wait to fill his bowl.

Chicken and Leek Soup with Wild Rice and Prunes

Chicken and Leek Soup - THis Book Cooks Review

Ingredients

  • 1 cup thinly sliced leeks
  • 1 tablespoon neutral oil
  • 4 cups of chicken broth
  • 1/2 cup coarsely chopped pitted prunes
  • 2 cups cooked chicken breast, torn into bite sized pieces
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon tamari or soy sauce
  • A few grindings of fresh black pepper
  • 1 cup cooked wild rice

Instructions

  1. In a large pot over moderate heat, saute leeks in oil until lightly browned.
  2. Add chicken brooth
  3. Bring mixture to a boil and decrease heat to simmer.
  4. Add prunes, chicken, parsley, sesame oil, tamari, pepper, and wild rice.
  5. Cook until heated through, serve immediately
