It’s Spring cleaning time and that includes cleaning up my pantry and freezer space. This is the time of year I take inventory of what I have leftover in my freezer from the produce I preserved last summer from my garden and local farmers market. It is a great time to take note of what I may want to grow again or what I might need to grow more of in my home garden to satisfy my families diet. Although I try to fill my freezer with fresh fruit and veggies I still have a few extras that aren’t so good for you like ice cream and frozen pizzas. To celebrate National Frozen Food Month I’m going to take a closer look at the items I have in the freezer especially the products with ingredients I can’t pronounce or have excess amounts of sodium and preservatives. In today’s post I’m sharing a yummy recipe from Veestro, a leading plant-based meal delivery service, provides fully cooked all natural plant-based meals delivered straight to your door! Not only is this recipe easy-to-make, but it is a great example of good things you can fill your freezer with.
1 cup Mixed berries (strawberries, raspberries, blueberries)
2 Green Apples
1 Cup Pineapple
2 tsp. chia seeds (optional – use ONLY after defrosted)
Juice the first 3 ingredients (preferably in a Masticating Juicer), can also be made into a smoothie. Separate into bottles and make sure to leave at least 1" of the bottle empty.
When you're ready to drink it, defrost and add the chia seeds for an awesome BOOST of nutrients.
