Carrington Farms Shakshuka-inspired Italian Eggs

This is the perfect whip up recipe with a fancy name that will make your guest think you slaved in the kitchen for hours.  Shakshouka is a dish of eggs poached in a sauce of tomatoes, chili peppers, and onions, often spiced with cumin traditionally. The recipe I’m sharing today is a fun Italian spin adding easy to grow fresh red onion and basil from your home garden will make it even more of a treat. I’m a huge fan of coconut cooking oil because it is a great alternatiive to traditional oils such has vegetable, olive, canola, and corn oil. The coconut oil I’m using in this recipe that has medium chain triglycerides (MTC) which is efficiently utilized by the body for energy production and helps aid in calorie burning.  If you use the Carrington’s  coconut oil in the recipe it is all-natural, gluten-free, hexane-free, NON-GMO, free of hydrogenated and trans fats and comes in a BPA free bottle.

Carrington Farms Shakshuka-inspired Italian Eggs

Ingredients

  • 1/8 cup red onion, thinly sliced
  • 1/2 spicy Italian sausage, chopped
  • 1/4 cup tomato sauce
  • black pepper, garlic powder, salt
  • 2 eggs
  • 1 tsp Carrington Farms garlic flavor coconut cooking oil
  • 2 tbsp chopped fresh basil
  • 1/2 oz parmesan cheese

Instructions

  1. Spray small pan with Carrington Farms coconut oil cooking spray.
  2. Heat over Low-Medium heat.
  3. Sauté onions and sausage for a couple of minutes.
  4. Add tomato sauce and season to taste then stir everything together.
  5. Crack eggs into the sauce and season again if desired.
  6. Sprinkle the basil and cheese around the eggs.
  7. Top the yolks with Carrington Farms garlic flavor cooking coconut oil and cover with lid until the whites set, about 1 minute. Enjoy!

Notes

(From the chef: I use the oil this way in this recipe because it helps cook the top faster without compromising the bottom, not to mention a great way of getting those healthy fats in without losing them to the pan.)
