Black Bean Spaghetti with AFRAID-O Sauce

Getting the kids to eat dinner on Halloween night was always a chore.  If they weren’t reaching for Halloween treats from Trick-or-Treat the sweets I had baked up for later that night were fresh in their minds.  When I saw the image for the Black Bean Spaghetti with AFRAID-O Sauce I knew this meal would help keep the ghost and goblins in their seat at Halloween dinner and enjoying a healthy meal.

The one day you can be super messy at the dinner table is Halloween.  Look at the ‘gore’ spread across the plate.

Black Bean Spaghetti with AFRAID-O Sauce

Ingredients

  • White Carrot Phalanges
  • 1 box Explore Cuisine Black Bean Spaghetti - cooked, drained
  • 1 jar of alfredo sauce (can choose gluten-free)
  • 1 jar of marinara sauce (choose one that is more blood red in color, rather than orange)
  • fresh basil

Instructions

    White Carrot Phalanges
  1. Peel 8 white carrots then carve with small knife into finger-bone shape.
  2. Steam until al dente.
  3. Set aside.
    Pasta
  1. Heat the sauces in separate saucepans over medium heat, stirring occasionally.
  2. Place warm Explore Cuisine black bean spaghetti in the center of four serving plates.
  3. Ladle alfredo sauce over the center of the spaghetti.
  4. Arrange carrot phalanges over the sauce.
  5. Splatter marinara sauce over the entire dish, in a gruesome manner.
  6. Garnish with basil.
