Nothing beats a homegrown and then baked at home potato. In this video I share my quick and easy recipe I’ve always used for taste potatoes you can load up with cheese and more fresh veggies from your home garden! You are going to want to pick a starchy potato such as russets or sweet potato for baking because they are absorbent.
Wash potatoes,pat dry and poke holes throughout the potato with knife (carefully).
cut foil big enough to wrap each individual potato
Melt coconut oil in microwave about 30 seconds.
In a shallow bowl pour melted coconut and cover with 1/2 tablespoon of pepper and 1/2 tablespoon salt.
Lay potatoes in shallow dish with oil, season and sprinkle with the remaining salt and pepper.
Wrap potato in foil with shiny side inside.
Bake in oven for 1 hour or until potato is cooked ; usually soft to squeeze with oven mitten.
Open potato by squeezing on long ends and add favorite toppings like home grown broccoli, cheese and chives!

Grow Your Own Potato
One of my favorite seeds (tubers) to start as soon as the soil warms up in the spring is the potato. In my geodesic bio dome right now I have a container growing sweet potatoes. Growing potatoes is super easy and you can usually start harvesting them 8 weeks after planted.
