I always say I could eat Mexican cuisine every day at any time of the day. Summer is one of my favorite seasons because all my southwest ingredients are available in my Midwest garden. Today I whipped up a quick Black Bean and Rice Salad for my late lunch after working in the garden.

Black Bean and Rice Salad
Bean and Rice with a BGspin
1 large head of green romaine lettuce (chopped)
1 large vine ripe tomato (chopped)
1 medium red onion (chopped)
1/3 cup of shredded cheddar cheese
1/3 cup of drained black beans
About 10 nacho chips crushed
Mix in Bowl with Rice Mixture and serve with a tablespoon of sour cream and your favorite salsa.
