It’s no surprise that the number one comeback dishes each spring is the salad with all the amazing easy to grow varieties there are available on the market. Growing your own lettuces will ensures a full of hydration and flavorful harvest. Sadly the only negative thing about growing salad is it can be challenging to find dressings and toppings that are high in fat, calories and sodium. Over the next week I’m going to share some fun salads with dressing ideas with you on my site. The first of these recipe shares is the outrageous Asian Salad that you can easily create for yourself and family to enjoy.
Pritikin's New Asian Salad
lotus root sliced into 1/2-inch thick pieces
1 teaspoon balsamic vinegar
1/2 teaspoon granulated garlic
6 cups mixed Asian greens
orange supremed (pith and mebranes cut away, leaving only segments of orange)
4 tablespoons fresh basil leaves sliced into thin strips
1/4 cup chives thinly sliced
Marinate Lotus root in vinegar & garlic.
Grill until light brown. Cool.
Place a small pile of green on each plate.
Put orange & grapefruit segment, basil, chives & lotus root on top.

At first glance of this recipe I was curious to what Lotus root actually was. I enjoy learning about what other regions in this world grow to include in their healthy diets. The lotus root is the root of the lotus flower, which is an aquatic plant of the Nelumbonaceae family. After doing some research online I found that the very same lotus flower I grow in my pond has been used in Asian countries for thousands of years and hold many health benefits.
