I had a blast meeting Terry last year at the Woodland Trial Gardens in Northern California.  Here are some photos I took of him sharing his peppers.  You can totally tell he LOVES peppers!!!

Pepper Guys Pickled Hot Pepper Recipe

Ingredients

  • 10 lbs jalapeno peppers (substitute okra, etc.)
  • Carrots, onions, etc. as desired
  • Garlic
  • Onion flakes
  • Bay leaf
  • Oregano
  • Thyme
  • Marjoram
  • Olive oil
    Brine
  • 3 Tb. Sugar
  • 9 Tb. Salt
  • 2 pints water
  • 2 pints white vinegar

Instructions

  1. To prevent collapsing, puncture each pepper, and then blanch fresh jalapeno peppers for 3 minutes in boiling water. Pack blanched peppers into tempered-glass canning jars (quarts work well). Add the following ingredients to each jar: 1/4 clove garlic, 1/4 tsp. onion flakes, 1 bay leaf, 1/8 tsp. ground oregano, 1/8 tsp. thyme, 1/8 tsp. marjoram, and 1 Tb. vegetable oil. Cover with boiling brine solution prepared as follows: Mix together: 3 Tb. sugar, 9 Tb. salt, 2 pints water, 2 pints vinegar. Close the containers with canning lids and process 10 minutes in boiling water, then cool. Note: Jalapenos should be hot when brine solution is added. The addition of carrot slices adds color to the product. One batch of brine is enough for 7 quarts of jalapenos if they are well-packed in the jars.

  1. Talk about a guy pepped up for peppers! Wow,they also look beautiful, I love peppers but have never grown them. I might have to try this year along with that recipe.

    • I can’t imagine a summer home garden without peppers. There are so many fun varieties on the market today for us to pick from. Great to connect Matt – lets keep in touch into the harvest season!

  3. Terry was so entertaining to listen to! I laughed every time he said “Wicked Hot” when referring to some of the spicier peppers he has bred. Great idea to have a professional plant breeder on to explain the process. Thanks!
