Fire Roasted Tomato Vegetable Soup
Busy week leading up to Thanksgiving and I’m super thankful for the recipe I’m sharing with you all today. This is the perfect meal to warm the family up on a cool autumn evening. The seasoned tomatoes and hearty chunks used in this recipe may just have my home canned tomatoes beat. Not only were the tomatoes super hearty the recipe was easy to make and I had most of the ingredients in my pantry.
I love this time of year when the air is crisp and cool filled with the scent of leaves that have been hit by frost. It is a time when I get to take a break from all the gardening outdoors and enjoy my harvest indoors. This year the tomato harvest didn’t produce as much canning as I would have liked mostly due to the challenging weather we endured. With the new recipes I’m trying out from Hunt’s Signature Collection I”m having fun challenging the family to guess is it from my garden or purchased? The tomatoes used in the Fire Roasted Tomato Vegetable Soup had a split vote last night at the dinner table. The winner was the empty pot I used to create this dish!
This was the first time I had ever used smoked paprika which happen to be one of the ingredients in this dish. I also decided to use some of my hot peppers in the recipes along with sweet corn I had frozen from the summer harvest. I wonder if I could grow paprika? I shared images on instagram on the #huntsrecipes hashtag as I was cooking it up.
